Emily Roasts Coffee | Francy Castillo, Colombia
Emily Makes Coffee. This time, she roasts it.
Meet a very special Colombian coffee, brought to life in collaboration with the one and only Emily Makes Coffee.
Grown by Francy Castillo in Nariño, Colombia, this extended-fermentation honey-processed coffee is roasted light to highlight its bright, juicy character and delicate sweetness.
Expect vibrant notes of tangerine, wildflower honey and cocoa powder, with a beautifully balanced finish.
Delicious as a filter coffee or a bright, juicy espresso.
A limited-edition collaboration. Once it's gone, it's gone!
From coffee creator to coffee roaster
We've been following Emily Makes Coffee since she had around 3,000 Instagram followers. Today, she's built a community of more than 50,000, sharing her hilarious, refreshingly honest take on coffee culture from Calgary.
When the opportunity came up to create a coffee together, we knew we wanted Emily to be part of the process, from selecting the green coffee to roasting the finished product.
Emily has a particular love for Colombian coffees, and we were keen to showcase the work of a female producer. Together, we landed on this exceptional coffee from Francy Castillo.
Meet Francy Castillo
Francy grew up working alongside her father, Fidencio, and four sisters on their family farm, Finca El Uberrimo, in Nariño, Colombia.
Inspired to elevate the quality of coffee grown on the farm, she went on to study agronomy at university, bringing new knowledge and techniques back to her family's work.
Beyond her own farm, Francy also leads the Berruecos project, connecting small-scale producers in the Nariño region with the specialty coffee market. Through the project, producers can earn premium prices for their coffees and reinvest in their farms.
It's exactly the kind of work we're proud to support.
From Colombia to the roasting drum
We first featured Francy's coffee at the regional AeroPress championship heat we hosted in September.
Emily travelled from Calgary to join us as a judge, and while she was here, she stepped behind the roaster to roast this coffee herself.
Her first time roasting coffee, and she absolutely nailed it!
The finished release features a custom label created by Emily's graphic designer, bringing another personal touch to this little project.
A special coffee, created with some very special people. We hope you love it as much as we do.

Filter: 16:1 water-to-coffee ratio (e.g., 20g coffee to 320ml water), medium-coarse grind
Recommended Resting
To get the best out of our coffees we recommend resting them. We have found for espresso the optimal age is 10 - 21 days after the roast date and for filter brew methods we find our coffees start tasting best after 3-4 weeks after the roast!
Love the artwork?
We've also created a matching Emily Roasts Coffee tote bag, made from sturdy organic cotton and featuring custom artwork from the collaboration.
The perfect companion for your coffee runs!
